Guava Shortbread Cookies

Ingredients

  • 227 g unsalted butter, softened

  • 135 g guava paste

  • 54 g powdered sugar

  • 312 g flour

  • 1/2 tsp salt

  • 1 tsp vanilla extract

  • 1 tsp vanilla bean paste (see note)

Directions

  1. Preheat oven to 350 degrees.

  2. Cut guava paste into small pieces. In a mixing bowl, cream unsalted butter, and guava paste until light and fluffy. Add powdered sugar and cream. There will be small chunks of guava in the dough.

  3. Add vanilla and vanilla bean paste.

  4. Add dry ingredients in 2 increments until mixed together.

  5. Place in fridge to chill for about 30 minutes. Roll out on a floured surface and cut out with your cookie cutter. Place on a lined baking tray.

  6. Bake 8-10 minutes.

NOTE: You don’t need to use vanilla bean paste if you don’t want to! Just omit the vanilla bean and add 1 more tsp of vanilla extract!
